Green Spinach Protein Pancakes
Okay guys its recipe time! I know by the title, you are probably wondering who the hell makes spinach pancakes, but this recipe is surprisingly delicious and good for you! The idea was inspired by St. Patricks Day, I was looking on Pinterest for something fun to make and came across this recipe. I altered a few things in the recipe to make it more healthy but overall, I was really happy with the finished product! These pancakes are really thick and sweet and really don't call for much topping once their done. I put honey and peanut butter on mine, but they would also taste really good with fresh fruit and greek yogurt! Heres the recipe!
One egg
3/4 c non fat milk
1 small container of plain or vanilla greek yogurt
a spoonful of honey
1 1/2 cups spinach
1 c flour
Chia Seeds
Cinnamon
2 scoops of lean vanilla flavored protein powder (I use Vega)
In a blender combine the egg, milk, honey, spinach and yogurt. In a separate bowl combine the flour, protein powder, chia seeds and cinnamon. Once both are fully mixed, combine them to create the batter. Cook them on a lightly greased pan (I used coconut oil) and make sure to flip them before they burn (as you can see I messed up a few in the photo). Dress them with your favorite toppings and enjoy!!
