Black Bean Brownies
Hi friends! Sorry for not posting in a while. Its been a busy past few weeks! I'm finally back and making time to share with you a new recipe. Black Bean Brownies! Not only does this recipe taste almost exactly the same as the real deal, its actually good for you! Naturally sweetened and gluten free! You're probably all wondering why the heck I pursued such a recipe and I can tell you it was not on purpose. We just happened to have a can of black beans in our fridge from a previous recipe so I figured we may as well put it to good use! I also happened to have all the other ingredients the recipe called for, not to mention a chocolate craving and this was perfect!
If you're like me, you tend to tweak a few ingredients when you're making stuff, but I should forewarn you, this is not the recipe to mess around with! In case you didn't know, black beans aren't meant to be made into brownies, so unless you want to eat something that tastes like cardboard, listen carefully!
Heres what you'll need:
1/2 cup of honey
1/2 cup of oats
1/4 cup of coconut oil
2 tablespoons coco powder
1/2-2/3 cup of dark chocolate chips (omit at your own risk)
2 tsp vanilla extract
1 can of black beans (15oz)
1/2 tsp baking powder
optional: more chocolate chips for presentation
Directions:
Preheat oven to 350 degrees and combine all the ingredients (except for the chocolate chips) in a food processor or blender. Be sure to blend until completely smooth and then pour into a greased (coconut oil) 8x8 baking pan. Bake for 20-25 minutes. I was having some oven problems so I had to keep resetting the timer after about 17 minutes. Be sure to check with a tooth pick before you take them out, they tend to get gooey in the middle. Let the brownies cool for at least 10 minutes and then enjoy! You should make about 9 brownies.
Tip: super yummy with ice cream or coconut milk!
