Happy Camper Muffins

Heres a little energy boosting snack for you! Happy Camper Muffins! The name is inspired by my upcoming camping trip, made especially for on the go traveling. Its super quick and easy and will surely keep you going through an action packed day! I have seen a million variations of these muffins, but I decided to add my own personal flare. If you want to tweak a few things, this recipe is super flexible!

Here ya go!

2.5 cups oats

2 bananas (or a cup of apple sauce, or one banana and half a cup of applesauce)

1 cup greek yogurt

3 tbsp chia seeds

1 tbsp peanut butter

1/3 cup honey

1/3 cup shredded coconut

2 tsp baking powder

1 tsp baking soda

2 eggs

1 tsp cinnamon

1tsp vanilla

small handful of sliced almonds (optional)

small handful of blueberries (or chocolate chips)

Combine dry ingredients first before adding in the wet ingredients! Add the blueberries (or chocolate chips) last. Make sure to grease your muffin tin before pouring in the batter and then bake at 350 for 17-20 min. It should make about 12!
