Quinoa Granola
Calling all Quinoa lovers! This granola is a perfect toping on your favorite greek yogurt, smoothie, or you can enjoy it with milk as your own homemade cereal! Its also perfect for post workout fuel since its packed with protein and healthy fats to keep you energized and recovered. This recipe takes about an hour to prepare, and can be stored at room temperature in a sealed container for weeks!
Here it is!
2 cups oats
1/3 cup honey or maple syrup
1 cup quinoa (not cooked)
chia seeds
3/4 cup sliced almonds
1/3 cup shredded coconut
1/3 cup coconut oil
1 tsp cinnamon
(optional: chocolate chips, dried cranberries)
First, combine all dry ingredients in a separate bowl. In a smaller bowl, combine the coconut oil and honey and melt in the microwave for about 30 seconds. Combine all the ingredients, but if you are adding chocolate chips/dried cranberries, wait until the granola has been cooked and cooled before adding. Spread the granola on a cooking pan and bake for 35/40 minutes at 325 degrees. If you like your granola to be more crispy, add more time. Be sure to let it cool before transferring it into a sealed container. It should make about 6 cups!
