Blender Chocolate Zucchini Muffins
This recipe is so good and also guilt free! You can enjoy these muffins before a workout, after a workout, or pretty much any time of the day!
Ingredients:
1 medium zucchini or about a cup (shredded)
1 ripe banana
2 tbsp 100% cacao powder
2 eggs
1 cup oats
2 tbsp honey
1 tsp baking soda
1 tsp vanilla
1 tsp cinnamon
chia seeds
optional add ins: large handful of dark chocolate chips (highly recommend), raisins, shredded coconut, a spoonful of peanut butter
Combine all ingredients into a large blender and blend for a few seconds until smooth. Then, poor into a muffin tin and bake at 350 for about 15 minutes (baking time will vary depending on the size of your muffin tin).
