Greek Yogurt Cookies
When I was a little girl, my dad always made these funny white, fluffy, cookies to put in my lunch box. At the time, I didn't think anyone else's dad made a cookie quite like it, in fact, I still don't. I don't know many people who have heard of Sour Cream Cookies from the very outdated, Betty Crocker Cook book (you get major points if you have); which is probably ten years older than I am (maybe more). Those cookies always made me happy as a kid, and it wasn't until recently I realized my dad hardly makes them anymore. Last night, my family and I were watching a movie when we all had a sweet tooth craving, but couldn't decided what to make. Suddenly, I realized how similar sour cream and plain greek yogurt were in taste and suggested we make the substitute since we had a lot of plain greek yogurt to use. It ended up being a total success and of course a flash back to my happy little childhood.
Before I give you the recipe, I should forewarn you, this isn't like my typical healthy desserts. You'll find it has some ingredients I wouldn't always use. But, everyone deserves a treat from time to time and I am a firm believer in enjoying all foods in moderation!
I think a little later I am going to try to substitute more things into this recipe to make it "healthier" and I will add suggestions for you to try! I haven't used all of these substitutions yet, but if it ends up being a success, let me know (sorry if it ends up being a total fail).
Recipe:
1 cup sugar (substitute: honey or date sugar)
1/4 cup shortening (substitute: coconut oil?)
1/4 cup butter (substitute: coconut oil)
1 tsp vanilla
1 egg
2 2/3 cups of all purpose flour (substitute: almond flour, coconut flour.. etc)
1/2 cup plain non fat greek yogurt (You could also tried flavored greek yogurt, but it will change the taste quite a bit)
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/4 tsp ground nutmeg
Combine all the ingredients into a bowl and heat oven to 425 degrees. Place dough on an ungreased cookie sheet. Bake for 6-8 minutes. It should make about 4-5 dozen cookies!
