Fathers Day Brunch
Happy late Fathers Day everyone! Even though it was yesterday, I wanted to share the brunch I made for my dad, which would be delicious for brunch any day! My dad's favorite thing is coconut and dark chocolate, which is why he loves Almond Joy candy bars. So, for brunch I decided to create Almond Joy French Toast Bake, with a berry fruit salad, strawberry limeade, and also coconut cold brew coffee (for me and my mom). The french toast recipe was totally made up, but the strawberry limeade was found on Pinterest, and the cold brew was found on Thug Kitchen (great website). I tried to make everything as healthy as possible, but we splurged a bit too!

Coconut Cold Brew Coffee:
Perfect for summer time!
You will need:
a pitcher
3 1/2 c cold water
3/4 c ground coffee (whatever kind you want)
coffee filter
coconut milk
ice
In a pitcher combine the water and ground coffee and let it sit to soak over night (or a few hours). The next day secure a coffee filter over the top of the pitcher and pour the coffee into separate cups filled with ice, make sure to catch all the coffee grounds while pouring. Then, top it off with your favorite brand of coconut milk or any flavoring you want and enjoy! Makes about 3 cups.
Sparkling Strawberry Limeade
refreshing drink for a hot day!
You will need
a blender
Strawberries
1 Tbsp Honey
1 cup ice
1/3 c lemon juice
a can of La Croix Lime (or any flavor you want)
First blend the strawberries, ice, honey and lemon juice. Once fully blended, pour in the can of La Croix and blend for a few seconds. Then, serve with your favorite berries! Makes about 4-5 cups.
Almond Joy French Toast Bake:
You will need:
A medium sized loaf of bread (not pre sliced)
A cup of shredded coconut
1/2 cup dark chocolate chips
4 eggs
1/3 cup honey
a tbsp cocoa powder
1/2 cup coconut milk
1 tsp vanilla
a loaf pan
sliced almonds
in a small bowl, combine eggs, some of the coconut, honey, cocoa powder, coconut milk, and vanilla. Then, cut the loaf into thick slices. Dip each loaf into the batter and set in the loaf pan. Once all the slices are in the pan, top with the remainder of the shredded coconut, dark chocolate chips, and almonds. Bake at 350 degrees for about 40-45 minutes. Serve topped with fresh fruit and honey or peanut butter!
